2.  Donegal: Redcastle Hotel & Spa, €104pp

The Redcastle Hotel is a great choice to explore this coastal county. I stayed on the Inishowen Peninsula a few years ago and loved it – it has stunning scenery and some of the best beaches in Ireland. However, with a waterfront location, 9-hole golf course and Thalasso Spa, you may find it difficult to leave.
